Bubbles

My mom took Mattie and I to the park today to blow bubbles..except we didn't have to do any blowing..as soon as you took the wand out of the solution..bubbles were formed with the strong winds! We didn't stay very long..the wind was so strong..Mattie had a hard time standing up. We have a cold front moving in tonight..I hope the storms aren't too bad.




Here is the recipe we used in class on Friday @ Y.C.A.
Homemade Pizza & Calzone Dough
1 packet active dry yeast
1 cup warm water (should feel like the temperature of your bath)
1 tsp. salt
3 cups all purpose flour
1 to 2 Tbsp. olive oil
Additional flour or cornmeal for rolling dough
1. In the bowl of a food processor or electric mixer, dissolve the yeast in the water and let stand for 5 minutes.
2. Add the salt, flour, and olive oil and mix until the dough forms a ball.
3. Turn the dough out onto a surface dusted with flour or cornmeal and knead briefly until smooth.
4. Lightly oil a medium-size mixing bowl and turn the dough in the bowl to coat. Cover with a damp dish towel or plastic wrap and let rise in a warm, draft-free area for 1 hour, or until doubled in size.
5. Punch down the dough and place on a surface dusted with flour or cornmeal. Knead for about 10 minutes.
6. Flatten the dough into a disc and divide it into 6 equal portions with a knife or spatula (for calzones).
7. Roll out each portion, gently stretching it with your hands and set on a cookie sheet.
Makes 4 twelve inch pizza crusts or 6 calzones.
Calzone Filling
2 cups shredded mozzarella cheese
2 cups ricotta cheese
1/2 cup parmesan cheese, freshly grated, if possible
2 garlic cloves minced
1/2 cup olive oil
1 cup chopped veggies of your choice (optional)
5 oz. pre-cooked meat of your choice (optional)
Salt and pepper to taste
1. Preheat oven to 450 degrees.
2. Divide dough into 6 pieces.
3. Roll dough into a circle.
4. Brush inside with a little olive oil.
5. Mix mozzarella cheese, ricotta cheese, parmesan cheese and garlic together in a bowl.
6. Add 1/6 of the cheese mixture, meat, salt and pepper on 1/2 of the dough circle.
7. Fold the dough over and press edges together.
8. Cut two or three small slits in top of calzone.
9. Brush top of each calzone with olive oil.
10. Bake in preheated oven on a greased baking sheet for about 15 minutes, or until the crust is golden brown.
11. After baking, brush with olive oil again and sprinkle with more parmesan cheese. Dip Calzone in marinara sauce if desired.
Makes filling for 6 calzones.

Izzy,
It looks like you and Mattie were having lots of fun with the bubbles. Maybe some day when we come to visit we can go to the park with you and Mattie and enjoy the day with my two favorite grand daughters and the dough recipe sounds delicious can't wait to try it!

Looks like you and Mattie had lots of fun making bubbles. I always did like to do that. Maybe some day I'll be able to go with you guys to the park and blow bubbles.
