As promised....

Chicharones..the vegetarian version..read about it here. They have the texture of a pork rind..but these are better for you. See how small they are on the right in Guelita's hand (it looks sort of like pasta)..they blow up after you fry them..Guelita serves them with *Valentina Salsa Picante* you can get a big jar for $2.09 at the Mexican Supermercado on Nolensville Rd. It is my mom's new favorite place..it's very clean, the owner is friendly and the prices are very good!
In photo#3 you can see the large sheats of the chicharones..they look more like a pork rind..you can also use these large ones to make chalupas..top with refried beans, cheese, avocado, etc.
